I will be joining my job next month. So, wanted to understand if I should apply for Amex cards now or wait till I receive the first payslip. Does Amex generally ask for income proofs for cards like MRCC/Plat Travel?

You should wait for 2-3 months after you start receiving salaries. Yes, they will ask you for income proof(Last 3 months' Salary Slip/Bank statements) definitely if this is your first Amex card.
